Oh so soft, and fluffy like a cloud! Japanese Milk Bread (aka Shokupan or Hokkaido bread) is soft and slightly sweet with a dense, delicate crumb and chewy texture. The lovely mouth-feel of the bread comes in part from the tangzhong technique (cooking some of the flour into a roux before mixing all the ingredients), which also increases its shelf life.
