Country Loaf

Sometimes basic is the best! This is a naturally leavened hearth bread with 20% whole wheat (enough to add flavor but not impair texture). The crust is chewy and crackly at the same time, the crumb is elastic and open (but not so holey that your mayo oozes out!). The flavor is lightly tangy and deep, coming from a long, slow ferment. It makes great toast, sandwiches, accompaniment for soups/salads, and general eating.
